These oatmeal cookies are tender, chewy, and full of banana flavor! The familiar cozy spices and plump blueberries make them much more irresistible. They'll keep for at least one week if kept in an airtight container in the refrigerator--should they last long!
1 cup (100g) instant oats (fermented if essential and quantified like that )
3/4 cup (90g) whole wheat or gluten-free* flour (measured like this)
1 1/2 tsp baking powder
1 1/2 tsp ground cinnamon
1/4 tsp salt
2 tablespoons (28g) unsalted butter or olive oil, melted and cooled slightly
1/4 cup (63g) mashed banana
1 tsp vanilla extract
In a medium bowl, whisk together the oats, flour, baking powder, cinnamon, and salt. In another bowlwhisk together the butter or coconut oil, mashed banana, and vanilla. Stir in the maple syrup. Add the flour mixture, stirring just until incorporated. Fold in the raisins.
Preheat the oven to 325°F, plus a baking sheet with a silicone baking mat or parchment paper.
